Margarita Chicken Fajitas

Tonight I'm making my Margarita Chicken Fajitas. I call them Margarita Fajitas because the basic ingredients are of those in a Frozen Margarita. You'll want to prepare the poultry and let marinate for about two or more hours.

Ingredients

  • Four Boneless Chicken Breast
  • 1 limes
  • 1 Lemon
  • Orange Juice or 2 oranges
  • 1 White Onion
  • 1 Red Onion
  • 1 Red Chili Pepper 
  • 1 Green Chili Pepper
  • Mushrooms (Optional)
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1/2 tsp Crushed Rosemary
  • 1/2 tsp Crushed Thyme
  • 1 tsp Garlic Salt
  • 2 oz shot Tequila
  • 1 oz of Triple sec
Cut the Chicken Breast into fajita strips. After cutting the fajita strips, take the salt, black pepper, rosemary, thyme, garlic salt Tequila and Triplesec and mix it into the chicken. Sliced the Lemons, Limes and Oranges and squeeze the juice into the mix. Let sit and marinade for about two hours.

Cut the Onions and Peppers into slices. I use a wok to cook my fajitas, but you can use a stir fry pan as well. I add some cooking oil to the wok in high heat and I take the white onions and saute the white onions. This will give the base a good flavor. Turn down the heat and add the chicken mix.

When the chicken is about 2/3 way cooked, add the remaining vegetables (Red Onions, Green and Red Peppers, and Mushrooms). Continuously mix the chicken and vegetables in your pan or wok until the chicken is fully cook.

Best served with corn tortillas, some salsa and guacamole.
